Cinnamaldehyde is an organic compound of aldehydes. It is a yellow viscous liquid and abundant in plants such as cinnamon. Cinnamaldehyde in nature is a trans-structure, and the molecule is an acrolein connected with a phenyl group, so it can be considered as an acrolein derivative. The color of cinnamaldehyde is produced by the transition from to *, and the presence of conjugated structure causes the absorption spectrum of cinnamaldehyde to enter the visible spectrum.

 

Details

General situation of
Cinnamaldehyde, commonly known as cinnamaldehyde, is found naturally in essential oils such as Sri Lankan cinnamon oil, cinnamon oil, patchouli oil, hyacinth oil and rose oil. There are two isomers of cinnamaldehyde, cis-type and trans-type, and the commercially available cinnamaldehyde, whether natural or synthetic, is trans-type.
 
The preparation methods
25% of 60mL sulfuric acid and 13gCe(NO3)3.2H2O were added to the anode pool, and the cerium salt was dissolved by magnetic stirring. Add an appropriate amount of 25% sulfuric acid to the cathode chamber, turn on the DC stabilized voltage power supply for electrolysis, control current relative density is 0.2a /20cm2, electrolysis is 8.2h. The anodic solution was transferred into a 250mL three-mouth bottle, and 1.349 cinnamyl alcohol was added. The reaction was stirred at 5~10℃. The end point of the reaction was when the solution was bright yellow and faded. The reaction solution was extracted with ether (15mL×3 times), and the extracted reaction solution was used to regenerate Ce4+. The extraction solution of ether was dried with anhydrous sodium sulfate, filtered, and evaporated to remove ether. Chromatographic analysis showed that the yield of cinnamaldehyde was 90%.
 
application
Cinnamaldehyde is permitted to be used as a synthetic flavor in food according to gb2760-2011. It can be used to prepare flavor for meat, flavoring, oral care products, chewing gum and candy. As a natural food preservative, it can be added to aquatic products and meat products.
